Telly chef James left Holly open-mouthed when he explained why eggs should never be kept in the fridge.

He was doing a segment on making a classic Victoria sponge cake when he gave away the secret.

Talking about using duck eggs for cakes, he said: “All eggs are porous, that’s why you never put eggs in the fridge by the way.”

He explained: “They absorb all the flavours from the fridge.

“So if you have truffle for instance, in the restaurant we use fresh truffle, you put that in a bowl with rice and put eggs on the top, cling film over the top and put in in the fridge overnight.

“When you break the eggs in the morning for breakfast for customers, truffle and scrambled eggs, there’s no truffle in it. The flavours have gone into the egg itself.”

Fans took to Twitter to comment on the segment which met with a mixed reaction.

One fan said: “I love James Martin but please ignore that info saying not to store eggs in fridge!

“If they’ve been washed they need storing in the fridge or you could risk getting salmonella.”

Another took issue with the use of duck eggs for a classic Victoria sponge.

They said: “Get real and accept the fact that most people watching him make a Victoria Sponge won’t be using his branded duck eggs to make their cakes.

“We shop in supermarkets and many are on a budget so we’ll just carry on baking with hens’ eggs on the shelf.”
